LAMB ROGAN JOSH



Punjab's favorite traditional dish, made with many yummy and mouth watering spices.

Ingredients
  • curd
  • 1 tsp lal mirch
  • turmeric
  • 600g lamb
  • onions finely chopped
  • Ginger & Garlic
  • Cumin & Coriander 
  • tomato puree
  • salt
  • bay leaves & unsalted butter
  • whole cloves
  • cinnamon sticks
  • fresh mint
  • fresh coriander

Preparation Method

  1. Mix curd with all the spices like mirch, coriander, ginger , garlic, cumin and turmeric.
  2. Remove the excess fat from lamb pieces and cut them in to medium sized pieces.
  3. Take a non stick pan along with onions and place the pan over medium heat stir until the contents begin to sizzle.
  4. Add the curd Mixture cover and cook for another 20 min, stir occasionally until the lamb has released all its natural juices
  5. remove the lid increasing the heat and cook for another 5 min until the sauce has reduced to paste like mixture.
  6. After that add tomato puree salt according to taste and 10 grams of unsalted butter.
  7. after cooking for another 5 min add 300 ml of boiling water and simmer for 15 min.
  8. take another pan add butter and put bay leaves cardamon, cinnamon and cloves .stir well and put contents over the lamb.
  9. stir in chopped mint leaves and coriander leaves
  10. serve hot.
